Summer Corn Salad
This can be made with fresh corn or canned
3 cups corn
1 cup tomatoes
1 green pepper
10 leaves fresh basil
1/2 mild onion
3/4 cup Ranch dressing (I used light)
chop all the ingredients finely...mix and add the dressing. Keeps in the fridge for a few days, so good!
I also ate it with another favorite last night...
Steamed broccoli, brown rice with cottage cheese on top... I love this and its a great way to use up lots of broccoli.
